You MUST use the included 2.5mm adapter that came with the adapter. Headsets with 2.5mm controller jack - Tritton AX Pros, 720, Astro A40s, A50s, etc.

The 3 rings on the Xbox One jack mean there are 4 wires, which support left speaker, right speaker, ground, and mic. This is the main reason why your chat mic is not working. Most 360/ps3/pc headsets have a 3.5mm controller cable with 2 black rings. if you look at the 2.5 to 3.5 cable included with the adapter, the male 3.5 mm end has 3 black rings. The chat adapter input cable is a very specific 3.5mm jack. This seems to be the biggest problem most people have, so i'll break this down by headsets i know.
